Broccoli Stir Fry
Broccoli stir fry
This is a quick and easy stir-fry which could be livened up with a handful of cashew nuts and served with noodles.
Ingredients
1-2 tbsp peanut or sunflower oil
2 cloves garlic, chopped
2cm/1in piece fresh ginger
2 broccoli heads, cut into small florets, stem sliced
2 tbsp honey
splash light soy sauce
1-2 limes or lemons, juiced
handful fresh coriander
Heat a wok until very hot. Add the oil, enough to coat the base and sides of the wok. Add the garlic and ginger and cook for around 30 seconds. Add the broccoli florets and sliced stem and stir-fry for 1 minute. Add the lime juice, soy sauce and honey. Stir to coat the other ingredients. Scatter in the coriander leaves and serve.
