Beetroot and Potato Soup
Beetroot & Potato soup
Serves: 4
Ingredients
1 tablespoon olive oil
1 chopped onion
250g potatoes
300g raw beetroot, diced
1.5 litres vegetable stock
1 clove garlic chopped
1 tablespoon wine vinegar
1 tablespoon lemon juice
Sour cream
Heat oil, add onions and potatoes, cook for 5 minutes. Add the beetroot, water, garlic, vinegar and lemon juice. Bring to the boil and simmer for 40-50 minutes. Liquidise. Season and add some sour cream. Serve
